Lebanese Lentil Soup Recipe

Ingredients
  

  • 2 cups red lentils
  • - 1 large onion
  • - 2 tbsp minced garlic
  • - 1 large carrot
  • - 2 medium Yukon potato
  • - ¼ short grain sushi rice
  • - 2 tsp cumin
  • - ½ tsp turmeric
  • - Salt
  • - Parsley
  • - ½ cup lemon juice

Method
 

  1. Fry your onions until lightly golden brown
  2. Add minced garlic and spices, fry for one minute
  3. Wash lentils until all foam in the water is gone
  4. Peel and dice carrots and potatoes
  5. Add lentils, veggies, rice, and water to pot with onion mixture.
  6. Place on high heat until it comes to a boil. Reduce heat to medium low and cook covered for 20 minutes
  7. When cooked, remove the lid and use an immersion blender to blend until smooth
  8. Add lemon juice to slightly cooled down soup and mix well
  9. Serve with lemon wedges
