Method
- Fry your onions until lightly golden brown
- Add minced garlic and spices, fry for one minute
- Wash lentils until all foam in the water is gone
- Peel and dice carrots and potatoes
- Add lentils, veggies, rice, and water to pot with onion mixture.
- Place on high heat until it comes to a boil. Reduce heat to medium low and cook covered for 20 minutes
- When cooked, remove the lid and use an immersion blender to blend until smooth
- Add lemon juice to slightly cooled down soup and mix well
- Serve with lemon wedges
