Masala Fries are a delicious part of Kenyan cuisine! They call them Chips Masala. I was introduced to them by my husband, and when I tell you my tastebuds were excited, it was a whole party in my mouth.
As someone who fervently believes that potatoes are a food group on their own, I knew I had to have these made in a way that I could share with you all.
I decided to recreate them with an Afghan adjustment. We love to eat them especially with grilled chicken off the grill. I hope you enjoy these the next time you’re craving fries. Noshejaan!
Afghan Masala Fries Recipe
Ingredients:

3 potatoes cut into fries form or 1 bag frozen fries

1 onion diced

1/2 bell pepper sliced

1 tsp curry powder

1/2 tsp turmeric

1/4 cup oil
-
1 tsp salt
-
1 tbsp lemon juice
-
1 tbsp tomato paste
-
2 tsp minced garlic
-
handful fresh cilantro
Instructions:

Boil and fry your potatoes until they become crispy. If using frozen fries, bake according to bag and set aside

Fry your onion in oil until golden brown on high heat

Add bell peppers, frying lightly for 1 minute

Add garlic to your frying pan, stirring until it becomes light brown, approx. 1 minute.

Add in spices and mix well, cooking for 20 seconds.

Add in tomato paste and lemon juice, mixing well for 20 seconds

Turn off heat and add in your fries and salt, mix all ingredients until well incorporated.

Serve on a platter, adding chopped cilantro on top (optional)
