Chipotle restaurant had become one of my staple go to's as a long time student, from undergrad through my PhD, it was a reliable quick and healthy meal that I could enjoy while studying. Now that my student days are over, and I have a family to feed, recreating the rich flavors from my favorite dish at Chipotle was a must. Their cilantro lime rice is especially scrumptious, combined with black beans and chicken and it's a home run dinner every time I make it. What's even better is that I can rely on my InstaPot to do most of the work so that I can create a delicious and healthy meal without spending a lot of time on it.

INSTANTPOT CHIPOTLE RECIPE
INGREDIENTS:
2 lb chicken thigh
1 medium to large onion
2 limes
4 tsp salt
3 tbsp oil
1 cup cilantro chopped
1 can black beans
2 cup brown rice
1 bunch green onions (optional)
INSTRUCTIONS:
Dice onions. Press Saute on InstantPot, add butter/oil and saute onions until golden brown.
Add chicken and 2 tsp salt. Mix well. Close lid of InstantPot, press the Pressure Cook/Manual button and use +/- buttons to set the time to 8 minutes.
While chicken is cooking, chop green onions. Set aside in a bowl. Chop cilantro, set aside in a bowl. Juice lime, set aside.
Once the cooking time is complete, set the steam release to “venting” for quick release, use a kitchen towel to quick release the steam so as to not burn yourself. You will notice that the chicken has released its own water, enough to cook the remaining rice in.
Add the rice, 2 tsp salt, lime juice, green onions (optional), mix. Close lid of InstantPot.
Press the Pressure Cook/Manual button and use +/- buttons to set the time to 24 minutes.
Quick release the InstantPot (or if you have errands, you can leave it to depressurize on its own). Add black beans, mix well. Close lid to allow to continue to steam for 5 minutes.
Remove lid, add chopped cilantro and mix well. Noshejaan!*
