Easy Fancy Afghan Fusion Ricotta Cake Recipe


I love to create delicious recipes that everyone can recreate in their home. One common thing I hear is, I'd love to bake like you but it's intimidating. I came up with this cake to make the premise of a "fancy" cake accessible for even those at the very beginner stages of baking in the kitchen. It tastes and appears fancy, but is the most simple and delectable cake of all time.


I love the light and airy texture of ricotta cheese, especially in creating that Afghan sweetness flavor profile. Afghan desserts are typically more of a bread texture with some slight sweetness that is not overpoweringly sweet. As a result, this cake combines simple flavors to create that perfect blend of sweet without an overpoweringly sugary taste profile. I hope you enjoy this as much as I did in creating it!

 

Easy Fancy Afghan Fusion Ricotta Cake Recipe


Ingredients:

  • 1 Yellow Box Cake Mix

  • 2 sticks butter

  • 8 cups powdered sugar

  • 2 blocks of 8oz cream cheese

  • 1 pint of whole milk ricotta cheese

  • 2 tsp vanilla

  • 1/2 tsp salt


Instructions:

  1. Follow the instructions to bake your yellow cake box mix according to the back of the box. (I like to use this one from Betty Crocker, but any brand is fine)

    1. Once you have mixed the batter, grease two 9 inch round cake pans with spray oil or butter.

    2. Then split your batter in half, pouring half of the amount into each cake pan.

    3. Bake according to the cake box instructions until the cakes are complete.

    4. Remove from oven and set aside to fully cool.

  2. After baking your cake, create your cream cheese buttercream frosting.

    1. Remove your butter and cream cheese from the refrigerator and freezer and allow them to sit on your room temperature countertop for 2 hours to soften.

    2. Combine your butter and cream cheese in a stand mixer and beat well until creamy and well combined and lump free

    3. Add vanilla and salt and stir well

    4. With mixer on low, slowly add in your powdered sugar until completely combined

    5. Optional: add a few drops of food coloring to color your frosting

  3. Now it's time for assembly of your cake.

    1. Take one cake out of its pan and set atop a cake board or serving plate. Using a long knife, cut off any cake from the top to create a flat top.

    2. Using a flat spatula, lay out ricotta cheese on top of the cake and evenly spread across

    3. Take your second cake and place on top of the ricotta cheese. Also level out the top of this cake by cutting off any of the bumps from the cake top to create a flat level surface

    4. Using a spatula, spread your frosting across the cake. You don't have to create a flower pattern, if you would like to do so, use a 1M piping tip and piping bag to create the pattern. Noshejaan!
